Since joining Christendom College as its Executive Chef, alumnus Donald Higby has worked tirelessly to provide the best selection of meals to the students on a daily basis, offering so many new and improved menu options, as well as many farm-to-table offerings. Working with students who have various food allergies and special requirements, Chef Higby and his professional staff are able to work individually and personally to ensure that their dietary needs are met.

Alongside his weekly duties as Executive Chef, Higby finds the time to provide catering services to various local groups, schools, and organizations, which helps raise money for the college.

Through Charlemagne Catering company — a farm-to-table operation that has earned rave reviews and awards — Higby, has brought an entrepreneurial spirit to his work from the beginning of his tenure as Executive Chef. From serving food at major college sporting events to winning culinary awards at local events, including the annual Slow Food Vast Wine fundraiser, Higby has worked diligently to raise awareness about the culinary offerings available from Christendom’s kitchen staff.

The company, which is based out of Christendom, caters many festivals, galas, winery events, and weddings, sourcing most of its ingredients from farmers in the Shenandoah Valley. Higby designed the available menus for customers, including breakfast, brunch, appetizer, lunch, dinner, barbecue, and lobster and crab bake options. When it comes to cooking and serving at the events, Higby utilizes his regular kitchen staff, giving them extra income as well. The catering has proven popular, with the company earning great reviews since its inception.

Higby is driven by the desire to serve in everything he does. That desire — from finding new ways to serve students to founding a catering company — has impacted the Christendom community and beyond for the better, helping improve his alma mater as a result.
